My father-in-law is growing Basil and he gave a bunch of it to me!! I haven’t worked a lot with Basil and am not as “schooled” on it as I’d like to be, but I do know that I LOVE Pesto!! I’m sure many of you have made Pesto before, but this was my first time!! If you can believe it, I don’t have a food processor (I know….what am I thinking?!) We got one for a wedding gift, but I never used it, so we sold it in a garage sale years ago. Then, a few years later, I realized I wanted one, so I bought the mini Kitchen Aid one. I loved it, but ended up losing the blade and never got a replacement. I have supplemented here and there with my Baby Food grinder/processor for other recipes, but for this recipe, it was waaaaaay too small. So, I tried to think positively, and I pulled out my blender! It actually turned out beautifully!!!

For 5 cups of Basil, it doesn’t make a lot, but it will make enough for, at least, 4 meals. I put one container in the fridge and am freezing the other three. It is DELICIOUS!!! Can’t wait to eat it!!
